Solanine can cause symptoms of poisoning in humans
Did you know that green potatoes can not be eaten. Even those who are thoroughly coated with the seedlings should be avoided.
While some might think, that you should avoid them because of unpleasant taste, the truth is that they can be extremely harmful. Recently published study by Dr. Carolyn Wright of the University of Nottingham , becomes clear that unripe potatoes can cause irreparable damage to the stomach.
Many people think,that potatoes are root vegetables, such as carrots, parsnips and other root vegetables that grow underground. In fact, potatoes are a type of modified stem plants and kind of tuber. Vegetables are very swollen stems, formed under the ground and grown from potato mother, which is planted.
This allows the plant to survive the cold winter period, as the tubers are deep below the soil surface where they are protected from frost.
Most of us are aware that potatoes are high in carbohydrates. This is so, because they need enough stored food to survive the winter.
The food in the form of sugars is created by photosynthesis – the process by which plants use the energy of sunlight for the production of glucose from carbon dioxide and water.
While this energy is used by some plants immediately, perennials – those who live for more than two growing seasons – will conserve energy for growth beginning next spring. They need this food to be able to generate enough energy to rise to the surface of the soil where they grow new leaves to photosynthesize. In other words, potatoes contain a kind of packed lunch in itself.
If you look closely at a potato, you will notice small patches on it. These are actually the nodes of the stem. If the potato is planted, from it will grow the plant. If you leave it too long in the cupboard, from there will grow sprouts.
Sprouts begin to grow, if they kept in warm. The process will be accelerated if the potatoes are exposed to sunlight. Accurately and therefore they should be stored in a cool, dark place. Exposure to light triggers certain physiological reactions within the tuber.
Why should not eat green potatoes though. The production of chlorophyll trigger green – this is not harmful and does contain high amounts of beneficial minerals and substances such as iron. But light and heat also lead to the production of solanine – a chemical which can cause symptoms of poisoning in humans, if consumed in large quantities.
Symptoms include nausea, diarrhea, vomiting, stomach cramps, burning throat, headache and dizziness. This chemical tends to concentrate in the skin of the potatoes with chlorophyll, and also in developing new shoots. So it is advisable not to eat green potatoes or those, in which began to grow shoots.
